For each prep session, I would like to have at least one
recipe for each of the main categories that I like to stock my freezer with.
One Dish Wonder-
For me, a "One dish wonder" is a meal in a pan that I can pull from my freezer or Fridge, throw
it in the oven and be done making dinner.
Flexible Fillers- Fillers
are great because they can be used in a number of ways. On low carb tortillas, in french bread, crescent rolls, the possibilities
are endless! These will be ready to freeze in the plastic containers provided. When you are ready to use them, thaw, scoop
and bake.
Crock Pot Corner-No freezer is
sufficiently stocked without crock pot meals to throw in the slow cooker while you go about your business.
PC Cuisine-
I didn't really have a good name for this kind of prep. This is the kind of meal I may have more
time to prepare on the day of serving. Something that may have a few more steps involved. Nothing too fancy though.
Freezer Prep Strategies
I have found that I maximize my time by preparing 4 of each of the meals that I decide to prepare for the month. I only
do this with the meals that my family has tried and approved of. (Yes.... I learned this the hard way.) This way I have them
in the freezer and ready for the next 6 months or so. So whatever meal I prep in September won't be prepped again for the
next few months.
Meat
I prep meat on separate days from meals, so if you come to prep meals, any dishes that require cooked meat will
be quicker to assemble. Some meals may require you to choose the type of meat that you would like to prepare it with.
About my meat prep...
Ground Beef- I use 96% extra lean ground beef. This may sound weird and gross but I brown it with very small pieces
of onions, carrots, celery and green peppers. They are so small that they are nearly indistinguishable once assembled in a
dish. The addition of the vegetables adds a little fiber and moisture to the meat as it is very lean. I use Nature's Seasoning,
salt and pepper also. (no msg)
Grilled Chicken-I use only boneless chicken breast. I cook it on my gas grill with a bit of sea salt and
cracked pepper.
Shredded Chicken- I cook around 5 pounds of boneless chicken breast at a time in the crockpot with a can of diced
Tomatoes and green chilis.
Shredded Beef- I cook about 4 pounds of roast at a time in the crockpot with a can of diced Tomatoes and green
chilis.
